memorial service update

As many of you know, she’s been ill for a while - I visited her in Thailand over the summer when she first started doing poorly. I found out today from my aunt that she has passed away. Many of you from Texas/High School met her or knew her, so I know you all will understand what a important person she was to me. While most of the funeral rites will be in Thailand after the New Year, I have been told that there will be a memorial/mass for her next Tuesday in Dallas. If you are interested in learning the when and the where, please email me and I’ll send you the details as I learn more myself. I may or may not be able to make it, but I know you would be welcomed and appreciated for the support.

Ingredients:
3 corn cobs, total weight about 250 g
1 garlic clove, crushed
small bunch fresh corinader (cilantro), chopped
1 small fresh red or green chilli, seeded and finely chopped
1 spring onion (scallion), finely chopped
1 tbsp soy suace
3/4 cup rice flour or plain (all-purpose) flour
2 eggs, lightly beaten
4 tbsp water
oil, for shallow frying
salt and ground black pepper
sweet chillie sauce, to serve
Preparation:
1. Using a sharp knife, slice the kernels from the cobs and place them in large bowl. Add the garlic, chopped coriander, red or green chilli, spring onion, soy sauce, flour, beaten eggs and water and mix well. Season with salt and pepper to taste and mix again. The mixture should be firm enough to hold its shape, but not stiff.
2.Heat the oil in the large frying pan. Add spoonfuls of the corn mixture, gently spreading each one out with the back of the spoon to make a roundish fritter. Cook for 1-2 minutes on each side.
3.Drain on kitchen paper and keep hot while frying more fritters in the same way. Serve hot with sweet chilli sauce.

I hope the batteries go out - they were on their way out anyway - and that you strip your screws. I appreciate that you went to the effort of searching my saddlebag yet left my bike helmet that was hanging on the handlebars - safety is important for everyone. Not that I can afford to replace it yet, anyway - thanks, fuckers.
